Mushroom Spinach Butternut Squash Lasagna

Don’t know what to bring to Thanksgiving Dinner? I got you. This Mushroom, Spinach & Butternut Squash Lasagna will be a big hit. It’s a dish that everyone can enjoy. The Meat Lovers, Pescatarians and Vegetarians. Well all but the Vegans as it contains dairy. Best of all, it’s quick, simple and delicious.

Butternut Squash Lasagna

What you will need…

1 box of lasagna noodles

1 28 oz. can of Crushed Tomatoes

10 oz box of Frozen Chopped Spinach

3-4 Cloves of Garlic, crushed

1 package Crimini Mushrooms, sliced

20 oz Peeled & Cut Butternut Squash

16 oz Ricotta Cheese

8 oz Mozzarella Cheese

5 oz Parmesan, Romano & Asiago Cheese Blend

Cayenne Pepper

Smoked Paprika 

Dried Basil & Oregano

Sea Salt & Black Pepper

Organic Cane Sugar

Olive Oil

Butternut Squash Lasagna

Cook the lasagna, drain and set aside. Coat Butternut Squash with olive oil, sea salt & black pepper. Roast until tender. Mash with half the Ricotta, and the Parmesan blend. Set aside.

Saute the spinach in olive oil, and season with sea salt & black pepper. Mix with the other half of the ricotta cheese and set aside.

Saute the mushrooms and crushed garlic in olive oil. Add the crushed tomatoes, season with sea salt, black pepper, cayenne pepper, basil and oregano. Add a little sugar to cut the bitterness. Bring to a simmer. Now it’s time to put the lasagna together.

Add a light coating of sauce to a dutch oven pan or pyrex dish. Now add a layer of lasagna noodles. Then a layer of the butternut squash and parmesan mix, and another layer of lasagna noodles. Next add a layer of the ricotta and spinach blend, top with a coating of mozzarella and another layer of lasagna noodles. Now add a layer of the mushroom sauce. Top with a coating of mozzarella cheese. Add another layer of lasagna noodles and top with the remainder of the mushroom sauce and mozzarella cheese.

Bake for about 40 mins until the cheese is bubbly and the edges are crispy.

Dutch Oven Mushroom Spinach Butternut Squash Lasagna

Serve hot as a side. Or serve a larger slice with some salad and garlic bread as a complete meal on an occasion other than Thanksgiving.
