I’ve pretty much mastered the art of making quick & delicious healthy meals. Ain’t nobody got time to be in the kitchen all day. Especially when it’s hot outside. I freestyled this Shrimp & Spinach Parmesan Couscous in about 15 minutes. And you probably already have all of the ingredients in the house.
What you will need…
1/2 lb of Shrimp (I prefer Argentinian Red)
1 cup Israeli Couscous, cooked
Bag of Baby Spinach, rinsed & drained
1/4-1/2 cup Fresh Grated Parmesan
chopped onion
crushed garlic
sea salt & freshly ground pepper
cayenne pepper
garlic powder
Preparation…
Season the Shrimp with sea salt, black pepper, cayenne pepper and garlic powder. Set aside.
Sauté onions and garlic in olive oil, or oil of your choice. Add the shrimp and cook two minutes on each side until it’s no longer transparent.
Now add the spinach and let it cook down. Then remove 90% of the excess liquid. Add the cooked couscous and grated parmesan, and stir until the cheese melts. Season to taste with sea salt and black pepper.
