Fish Fry Friday is a favorite in my house. Our usual go to for fried fish is whiting, but cod is good as well. Especially when I want to make sliders. Cormeal cod fries up nice and crispy just like whiting. And it’s amazing with spicy tartar sauce, served on Hawaiian Sweet rolls. Keep on reading to see how I whip up my Cornmeal Cod Sliders with homemade Spicy Tartar Sauce.
What you will need…
Fish
About 1 lb of Alaskan Cod (cut into pieces)
Cooking Oil
1 cup of cornmeal
Old Bay Seasoning
Cayenne Pepper
Garlic Powder
Paprika
Salt
Package of King’s Hawaiian Sweet Rolls
Spicy Tartar Sauce
Mayo
Relish
Sriracha Sauce
Preparation…
Mix cornmeal, Old Bay, cayenne pepper, garlic powder, smoked paprika and salt in a baggie. Add cod pieces, close, and shake until the cod is completely coated.
Heat cooking oil and fry coated cod pieces a few minutes until crispy on both sides. Let the grease drain completely in a colander lined with paper towels.
To create the Spicy Tartar Sauce, combine equal amounts of the mayo, relish and Sriracha Sauce. Add more or less of each ingredient to your taste.
To prepare the sliders, split the Hawaiian Sweet Rolls in half. Smear a generous amount of the Spicy Tartar Sauce on each half. Place a few pieces of cornmeal cod on the bottom half, then close with the top half to create sandwiches.
Serve alone, or with some homemade hand cut fries. Don’t forget the ketchup. Enjoy!
