Fair warning, you will see a lot of Trader Joe’s items featured in my recipes as I do about 90% of my grocery shopping there and absolutely love the place. I’ve always been curious about their Lobster Ravioli in the refrigerated pasta section so this time I took the plunge and put it in my cart. I love ravioli and lobster so it was a no brainer, plus the stripes drew me in further.
What you will need…
A package of Trader Joe’s Lobster Ravioli
1 tbsp Olive Oil
1 tbsp Unsalted Butter
shallot bulb, chopped
2 cloves of garlic, chopped
2 cups of baby spinach
1 cup of diced tomatoes and green chillies (optional)
Sea Salt
Black Pepper
Grated Parmesan
Preparation…
Cook the Lobster Ravioli per package instructions and set aside.
Heat the olive oil in a large pan and sautée the shallots and garlic until tender. Add the butter.
Then add the spinach and season to taste with the sea salt and black pepper.
Add the diced tomatoes and chile peppers. It will add some spice to the dish and make it a little more complex.
Add the Lobster Ravioli Pieces and coat evenly.
Top with grated Parmesan and serve while hot (makes 2 servings.)
