In an attempt to avoid take-out like the plague, I’ve been trying all of my favorite dishes at home. I’ve really been on a chinese kick lately. It is so much healthier when you make it yourself and know exactly what you put in it. This time I took a shot at Chicken Lo Mein. I love lo mein, shrimp is my favorite but I didn’t have any in the house so I went with chicken. You may substitute with shrimp or any meat or combination of meats you choose. I like to load mine with veggies.
What you will need…
8 oz chicken breast cut into cubes
1/2 cup onions, sliced
1/2 cup celery, sliced
1 cup green or red bell pepper, sliced
1/2 cup carrots, sliced
2 cups broccoli, chopped
1 cup mushrooms, sliced
1/4 cup green onion/scallion
1 tbs minced or 1 clove fresh garlic
2 tbsp vegetable oil
1/4 tsp Adobo w/ pepper
1/2 tsp garlic powder
1/2 tsp cayenne pepper
1/2 pack of chow mein noodles
Sauce
3 ounces warm water
1 tbsp corn starch
2 tbsp light soy sauce
1 tbsp oyster sauce
1 tbsp hoisin sauce
1/2 tsp ground ginger
Preparation…
Clean and season chicken with adobo, garlic powder and cayenne pepper. Set aside. Put on water for noodles and cook per package directions. In a small bowl, mix corn starch with warm water, soy sauce, oyster sauce, hoisin sauce and ground ginger. Set aside.
Heat 1 tbsp of vegetable oil in saucepan, add minced garlic then chicken and cook until browned. Remove from pan. Heat the other table spoon of vegetable oil. Add onions, then broccoli, carrots, celery, green pepper and mushrooms. Stir fry for 5 minutes until veggies are slightly browned. Put chicken back in pan, add noodles and stir fry for 2 minutes. Add sauce mixture and continue to stir fry for another 3 minutes. Add green onions, mix and turn off heat. Serve.
