This is one of my favorite meals ever, so colorful and full of flavor! Perfect as dinner for the family or to serve to guest at a dinner party. It’s sure to impress and everyone will be begging for your recipe. You’ll want to make this over and over again. I serve mine with black beans and white rice or homemade cilantro lime rice.
What you will need…
6- 4 oz salmon fillets
1 tsp lemon juice
1/4 tsp garlic powder
1/4 tsp goya sazon
1/4 tsp cayenne pepper
1 tsp extra virgin olive oil
for the mango salsa…
2 tbs extra virgin olive oil
2 tbsp minced garlic
1 cup fresh or frozen mango, diced
1 cup red onion, chopped
1 cup tomatoes, diced
1 cup fresh cilantro, chopped
juice from half of lime
1 cup avocado, cubed (optional)
Preparation…
Rinse the salmon, pat dry and rub down with lemon juice and olive oil. Season with sazon, garlic powder and cayenne pepper. Place in the broiler and cook for 2-4 minutes, flip over and cook for another 2-4 minutes. Remove from the oven and put to the side.
In a large pan, heat the 2 tablespoons of olive oil on medium. Sauté the minced garlic for 2 minutes, add the red onion and sauté for one minute. Toss in half of the cilantro. Add mango and cook for 3-4 minutes.
Squeeze in lime juice and toss in the other half cup of cilantro. Spoon over salmon and garnish with lime slices, add avocado on top if you wish and serve with sides of your choosing.
Enjoy!

This looks delicious, Erica! I’ve never tried salmon with mango salsa and I’m growing tired or preparing salmon the same three ways lol. I’m gonna have to give this a try. Thanks for sharing your recipe! Hopefully it will have my family begging for more 🙂
No problem at all. I totally understand, sometimes our meals seem to get a little bit too routine and boring so I try to find ways to spice it up 🙂
I saw this when you posted it on instagram! I can’t wait to make this. Love your recipes. I made the crab wontons and they turned out AMAZING!
