Another Italian dish for you guys. Simple, quick, easy & pretty healthy. No meat involved. Manicotti pasta stuffed with ricotta cheese and spinach, topped with mozzarella cheese & tomato sauce . Delicious and quick for a week night, but hearty enough for Sunday Dinner.
What you will need…
8 oz box of Manicotti
8oz container of Ricotta cheese
10 oz package of frozen or fresh spinach
Goya Salad & Vegetable Seasoning
26.5 oz can of tomato sauce
8 ozs shredded mozzarella cheese
Preparation…
Cook the manicotti as instructed on the package and drain. Place the drained Manicotti on a dish to dry further and cool off. Steam the spinach and season with one package of the Goya Salad & Vegetable Seasoning. In a bowl, mix the cooked spinach with the entire container of the ricotta cheese and put a layer of tomato sauce into your baking dish.
Begin to stuff each piece of manicotti with the ricotta & spinach mixture and place each one in the baking dish side by side.
Top the manicotti with the rest of the tomato sauce and then the mozzarella cheese.
Bake for about 45 minutes.
You may also use large shells pasta instead of manicotti and it’s just as deelish. Enjoy!

Maybe you can try it with part-skim ricotta and share, don’t eat too much. Even though I find it hard to share these. My son and I usually finish the pan in two days! lol
