Chicken Alfredo with Mushrooms & Spinach

I love Italian food and make different variations on the regular. I don’t eat too much rice but pasta is another story, pasta is my downfall. I usually make my Chicken Alfredo with broccoli but one day I saw my Auntie make it with mushrooms and spinach. I love mushrooms and spinach and it looked so deelish so I gave it a shot. Perfecto! *kiss fingers*

What you will need…

olive oil or olive oil spray

3 chicken cutlets or 2 breast

1/2 cup chopped onion (optional)

2 cloves minced garlic (optional)

1lb box of penne

1 cup of mushrooms sliced

8 oz fresh or frozen spinach leaves

1 jar of alfredo sauce

1/2 cup of milk

1/2 cup grated parmesan

Preparation…

Cut the chicken into pieces and season with seasonings of your choice, I used Adobo, Sazon, garlic powder and cayenne pepper. Saute’ the chicken in olive oil with the onions and garlic until it is no longer pink inside and then add the sliced mushrooms. Continue to saute’ until the mushrooms are tender and then add the spinach. Cover and let simmer for about 10 minutes.

Cook the penne until al dente, firm but not hard. Drain. Once the spinach is fully cooked add the alfredo sauce. Bring to a simmer and then add the milk, the grated Parmesan and the penne.

Stir everything together and simmer on low for five minutes, stirring constantly to avoid sticking. Serve topped with the grated parmesan…

Can use meat/seafood and pasta of choice. I also like to make it with shrimp and fettuccine. You can also just use spinach and mushrooms for a Vegetarian version.

  1. As much as I don’t like mushrooms, looking at this makes me think twice about them! LOL. Seriously, I think I just may try making this, it looks so good! I’m used to making penne pasta with chicken and broccoli. But this definitely puts a spin on that.

    I might even try it with fresh spinach (just to see which one tastes better) 🙂

    1. Lol when I was young I hated mushrooms, now I love them. Oh how the tables have turned.

      I don’t really notice a difference in taste from the fresh and frozen spinach so I keep some frozen spinach in the freezer for cooking, and use fresh in my salads.
