I usually cook a large Sunday Dinner to uphold my family tradition. This past Sunday I was really craving some Peach Cobbler and I had the ingredients in the house, sooooo… I made one from scratch and it turned out great!
What you will need…
Crust
2 cups all-purpose flour
1 teaspoon salt
1/2 cup butter
4-7 tablespoons cold water
Filling
1 lb frozen peaches (may substitute fresh or canned)
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1 teaspoon lemon juice
2/3 cup pure cane sugar
1/3 cup brown sugar
2 tablespoons butter (melted)
1 teaspoon vanilla extract
1 teaspoon all-purpose flour (optional)
Preheat oven to 350 degrees. In a large bowl, mix flour and salt with a fork. Fold in 1/2 cup of butter with a mixing spatula. Add water and mix until dough is formed. Split dough in half, roll out the first half and press into the bottom of a pie plate.
In another large bowl, mix peaches with cinnamon, nutmeg, vanilla extract and lemon juice. Add butter, cane sugar and brown sugar. Stir well until the juice thickens. For a thicker juice you may add a pinch of flour.
Pour the mixture into the pie crust. Roll out the other half of dough and cut into about 12 strips. Cover the filling with the strips of dough in a laced pattern as shown. Place on a cookie sheet to avoid dripping and bake uncovered for 35-40 minutes or until brown.
Let sit for 10-15 minutes and serve. This Peach Cobbler is great topped with a scoop of vanilla ice cream or whip cream. Enjoy!
