Banana Muffins fresh out of the oven are perfect for breakfast on the weekends, especially in the colder months with a Cup o’ Joe. The aroma of bananas and cinnamon is sure to wake up the entire house, and maybe the neighbors too. Here is my recipe for Banana Muffins. It makes a great base and you can spice it up with nuts, chocolate chips or whatever else you like, or you can enjoy the simplicity of these straight up, moist and full of flavor.

I love me some Granola Bars, it’s one of my favorite snacks but I find that I don’t buy them much anymore because I have a hard time finding the perfect combination of flavor and texture. I like mine not too sweet and chewy in texture, crunchy is hard on my teeth. While browsing my Allrecipes.com App on my iPhone for new meal ideas I found this granola bar recipe and used it as a base for my own. My search for the perfect Granola Bar is now over!

If you don’t know what a Beignet is, it’s a fried fritter or pastry garnished with powdered sugar and sometimes filled with fruit or custard. French in origin, it is very popular in New Orleans Louisiana especially at the world renowned Cafe du Monde. I’ve never been to NOLA nor have I ever had a Beignet, but I’ve had similar desserts such as Zeppolis and Funnel Cake which are also fried dough and powdered sugar. I go to Coney Island Amusement Park here in NYC just to get my Funnel Cake fix in the Summer, just an example of how much I love this treat. I plan to one day visit NOLA and have some Beignets at Cafe du Monde with a Cafe au Lait, but in the meantime I decided to try to make some at home and boy did they come out good!

Another Italian dish for you guys. Simple, quick, easy & pretty healthy. No meat involved. Manicotti pasta stuffed with ricotta cheese and spinach, topped with mozzarella cheese & tomato sauce . Delicious and quick for a week night, but hearty enough for Sunday Dinner.

I love Italian food and make different variations on the regular. I don’t eat too much rice but pasta is another story, pasta is my downfall. I usually make my Chicken Alfredo with broccoli but one day I saw my Auntie make it with mushrooms and spinach. I love mushrooms and spinach and it looked so deelish so I gave it a shot. Perfecto! *kiss fingers*
