Cornmeal Cod Sliders with Spicy Tartar Sauce

Fish Fry Friday is a favorite in my house. Our usual go to for fried fish is whiting, but cod is good as well. Especially when I want to make sliders. Heat cooking oil and fry coated cod pieces a few minutes  until crispy on both sides. Let the grease drain completely in a colander lined with paper towels.

Spicy Tartar Sauce

To create the Spicy Tartar Sauce, combine equal amounts of the mayo, relish and Sriracha Sauce. Add more or less of each ingredient to your taste.

To prepare the sliders, split the Hawaiian Sweet Rolls in half. Smear a generous amount of the Spicy Tartar Sauce on each half. Place a few pieces of cornmeal cod on the bottom half, then close with the top half to create sandwiches.
