Mexican Style Quinoa

Quinoa has become a staple in my kitchen and the tricolor variety is my favorite. It’s such a versatile grain and can be used as a side dish, to create a main dish and even to make burgers and hot cereal. It is a complete protein and contains all nine essential amino acids along with heart healthy omega-3 fatty acids.

Mexican Style Quinoa Recipe

What you will need…

Protein of your choosing

1/2 cup of quinoa (dry)

1 tbsp of olive oil

1/4 cup chopped yellow onion

1/2 cup chopped bell peppers

1/2 cup Trader Joe’s Cowboy Caviar Salsa (copycat recipe)

1/4 cup chunky, medium salsa


Cook quinoa and set aside.

Heat olive oil in a large pan and add the onions and peppers. Sautee until tender.

If adding a protein, add it now and cook until done.

Add the cooked quinoa, Cowboy Caviar and salsa to the pan and stir fry until everything is homogenous.

Serve hot with avocado slices and a green salad. (Serves 2)
